Oatmeal was one of the first things I tried to reintroduce to my diet as I desperately needed something... anything to make me feel full. I was constantly hungry. Sweet Potatoes and yams was my only solace. I was 92 pounds in my 5' 2" frame so I basically looked like I was dying. it was such a godsend when I found out I could eat Oatmeal! I did what I expect a lot of people do and I had too much making it every day with a little bit of banana and raisins... SOO GOOD! But I had to learn a lesson: "Don't have any grain everyday even if you find you can include it in you diet!" 3 times a week max and normal sized portions is my rule.
INGREDIENTS
1 cup certified gluten free rolled oats
1/2 cup flax meal
1/4 cup Coconut Butter
1/4 cup coconut flakes
1/2 cup of Flaxseed (if Tolerated)
1 teaspoon vanilla extract
1/3 cup maple syrup
1/3 cup pepitas (if tolerated)
1/3 cup mini chocolate chips (use 90% Cocoa chips)
1/3 cup dried cranberries
Pinch of pink or sea salt to taste
INSTRUCTIONS
In the bowl or a food processor, pulse together the oats, flax meal, coconut flakes, vanilla, and maple syrup a few times just until combined. Add the pepitas, chocolate, and cranberries and pulse again a couple of times until just mixed in.Line an baking dish with parchment paper. Press the energy bar mix into the bottom flatland very firmly very or roll into small balls. Sprinkle a tiny bit of salt on the top (optional).Refrigerate until chilled and firm, at least an hour. Cut into squares for Bars or pop a ball in your mouth. For storage use an airtight container in the refrigerator.
This recipe should make up to 9 energy bars or 18 energy balls.
Remember the safest and easiest way to snack and feel like you've actually chewed on something in our Autoimmune World are fresh vegetables. Carry and eat as much as you want of Celery, Carrots, Cucumbers etc. They don't fill the void for long but they are definitely healthy and you can binge on them as much as you want.
